quote: Originally posted by Randall: Easy As Pie Buttermilk Pie!Okay, this isn't from my family's secret recipe vault; it's a Paula Dean recipe, ya'll! But I did create the cool name. No pie crust needed! Just mix, pour, and bake. Slowly mix the following ingredients (just to thoroughly combine them) in a bowl: 1 1/2 cups of sugar 1/2 cup of Bisquick 3 eggs beaten lightly with a fork 1 cup buttermilk 1 tsp vanilla extract 1/3 cup melted butter Pour in a round pie plate (spray with Pam). I use a square glass one, so it doesn't look like a round pie. lol Bake in a preheated 350 degree oven for 50 minutes. It should be golden brown on the side, yellow on top, and spongy when you push down on the top. It looks like cake on top, but it's more pie-like on the inside. Cool for 5 minutes. It's also great refrigerated. Yummy for my tummy! Oopsie, I just pulled mine out of the oven and forgot to spray with Pam. So, the sides stuck. Oh, well, such is cooking. Things mess up sometimes. Update: After cooling in the fridge and cutting it, it didn't stick after all! I guess Pam isn't necessary.
Okay, I have to try this! Would any self-rising flour work the same as Bisquick? I might actually experiment tonight with a mix of eggnog and sour cream instead of buttermilk. IP: Logged |

I would hesitate changing the recipe. As written, it works perfectly.IP: Logged |

Okay fine, I’ll drink the eggnog and buy some buttermilk. Too tired to bake tonight anyways. IP: Logged |

Oh, wow. This is the best thing I’ve eaten in quite a while. I’m going to try 2 variations on it for Thanksgiving: one with coconut flakes (my daughter really wants coconut cream pie) and one that’s less sweet, but then do like a pineapple upside-down cake and line the bottom of the pan with brown sugar and butter. Best-case scenario, it’ll be like the love child of pound cake and flan. Going back for seconds. IP: Logged |
