Incredible modification: take a little airplane-size bottle of rum and soak some fresh grated ginger in it overnight. Then add that to the batter with only half the sugar and butter. Put the rest of the melted butter in the bottom of the pan with a cup of brown sugar, then pour the batter over it. Flip it over onto a platter once it’s cool.

Summer in winter, aka tomato soup
6 large tomatoes
1 small onion
3 Tbsp butter
2 Tbsp flour
Salt
Sugar or other sweetener (sorghum molasses is my preference)
Pepper, cloves, bay leaves, thyme, parsley, etc.
6-8 cups water Dice the onion very fine and sautée with 1Tbsp butter.
Quarter the tomatoes, scoop out the seeds, chop them up a bit more and add to the onions. Cook on medium-high until the tomatoes soften, then add water and spices and bring to a boil. Simmer for at least an hour, then make a roux with the remaining butter and flour (low heat 2-3 min in a small pan). Fish out any sprigs or leaves of seasoning herbs, add the roux, and purée with an immersion blender or whisk thoroughly. IP: Logged |

1 butternut squash
1 apple
1 onion
Thumb-sized chunk of ginger
Coriander, cumin, salt & pepper to taste (maybe a teaspoon to start?)
Olive oil/butter/whatever
Sautée the onion, ginger, apple, oil & spices in a big pot on medium-low heat.
Peel & seed the squash, dice it into smallish chunks (smaller=cooks faster), add and raise heat.
Add 6 cups of water, bring it to a boil, simmer on low until the squash falls apart with a fork.
Purée (or not)
