I love Nan too, but I always get it plain so it doesn't interfere with the flavor a of the food I scoop up with it. The very very spicy food. IP: Logged |

Indian food uses spices for health. It's not just an accent. "if you're going to use a spice, then USE it!" Motto for Indian cooking. Ami, I remember you wrote about Ghee on another thread. Indian food uses ghee, the golden elixir of life. Milk solids are cooked away with Ghee so it does not affect people with milk allergies and does not have the congestion problems of milk. I am so into Indian cooking, PS.I made the best meal I ever made tonight. I slowed cooked spinach with garlic,tamari, curry and organic red wine in olive oil. Then, I added soaked chick peas.
