I found this recepie in a crockpot cook book. My daughter loves butter chicken and this turned out very good. 2 lbs boneless skinless chicken breat cubed ( bite size pieces) 3 TAblespoons butter 1 large onion finely chopped 1 cinnamon stick 4 cardamom pods 1 tsp mild chili powder 1 14 oz can chopped tomato 1/3 cup chicken stock 1/4 cup light cream Salt and pepper Chopped cilantro Basmati rice and naan bread Marinade 1 cup cashews 1 tablespoon fennel seed 2 tsp ground cinnamon 1 tablespoon ground coriander 1 tsp black peppercorns 1/2 tsp ground cloves 4 cloves garlic crushed 2 tsp finely grated fresh ginger 2 tablespoons white wine vinegar 6 tablespoons tomato paste 2/3 cup plain yogurt ( not low fat )
To make marinade: Toast the first 7 ingredients in a nonstick skillet for 2-3 minutes. Place in a food processor with rest of marinade ingredients. Process till smooth, transfer to a glass bowl with raw chicken pieces mix well. Cover with plastic wrap and refrigerate overnight. Crockpot - melt butter in a large skillet add onion, cinnamon stick, cardamom pods heat for about 6 minutes until onion is soft. Add chicken and cook for about 5 minutes until chicken is sealed. Then add mixture to crockpot stir in chili powder, canned tomato and chicken stock. Cover with lid and cook on high for 7 hours.
Stir in cream and cilantro, season to taste with salt and pepper serve over rice with naan.
