Made with chicken, chicken broth, tomatoes, garlic, onion, red pepper, rice, peanut butter, salt and cayenne pepper. Lost my recipe. Wondered if anyone has made it and wants to share recipe ?? I can always ad lib with soups so it's not a problem, but it's really very delicious and others may want to try it. It's simple and yummy. IP: Logged |

Made it today. The peanut butter thickens it and adds a hint of flavor. Nothing obnoxious. It is very satisfying. I could eat it for every meal. IP: Logged |

This. Plus ginger, minus chicken, IMO. I’ve had a vegan Senegalese version at a restaurant, and a friend from Sierra Leone made a chicken & rice version, and @GCE mentioned an Ethiopian version that uses garbanzo flour instead of peanut, plus some spices I’m not familiar with... infinite variations. The basics: 1 can diced tomatoes plus an equal amount of water or broth 1 small onion, thumb-sized chunk of ginger, almost that much garlic, fresh hot pepper if desired. 2-3 Tbsp oil, ghee, etc. About 1/4 cup peanut butter Salt, cayenne,sweetener like molasses to taste maybe? (My preferred spicy additive is sambal Chile paste.) Finely chop & sauté all the fresh ingredients over medium-low heat until they start to soften & turn brown, then add tomatoes & water and bring to a boil. Simmer 20 minutes to an hour, add peanut butter (or garbanzo flour earlier in the process— haven’t tried this yet), remove from heat and purée. If you don’t plan to purée it, could add 1/2 cup uncooked white rice at the same time as the tomatoes. Tofu, chicken, etc. can be incorporated as well...DIY & share if it works!IP: Logged |
