One, I seem to be attracting many mars and/or venus in sagittarius men recently, and I was wondering if anyone knows why this may be? Or has any guesses?

Here are some of my own placements if this helps:
Ascendant Scorpio
Sun Virgo
Moon Aries
Mercury Libra
Venus and Mars in Virgo
Jupiter in Aries
Saturn and Uranus in Sagittarius

Two, I've read a lot about the possibility of Mars in Sag cheating on partners.... Does anyone have any positive experiences with this placement in relationships or dating? Is it possible to have a faithful mars and/or venus in sag?

The sign your 7th house is in shows the type of people you personally find attractive, but doesn't necessarily mean those people will come into your life...

For example, I have 7th house ruled by Gemini, so I'm attracted to people who are more airy, intellectual, and are comfortable with having relationships based on thoughts/ideas. But I have my Moon sitting in my 7th house...So all my boyfriends in the past were nothing but emotional and filled drama Unfortunately, this means there is a lesson to be learned from these people, b/c usually the theme goes that we attract personalities that we lack.

But if you want to get really technical, the best thing to do is to check the synastry chart between you and said person.

I have Taurus in my 7th house, but usually never attract them. I actually don't think I even know any Taurus men besides my brother.

But that's really interesting about the lesson to be learned... It's just an odd trend I've noticed w myself recently.

I know a few pepole with mars in sagg and thier all very devoted to thier mates, unfortunately it looks like thier mates are not so serious about them. Mars in sagittarius people that I know are always doing something especially when fired up.
