There are so many...
Tori Amos does it to me.... mostly anything she does.. I love a full sound, with beautiful lyrics and symphonic melodies

I love lots of rhythms as well. One that came to mind immediately is:

Stevie Wonder's "I Wish" - Just stellar!!

Other good ones would be:

I like all kinds. Spiritual music is beautiful to me. Especially if I have heard it before live in concert. Below are two bands I like and have heard live:

The lead singer is a friend of mine and is having a CD release party in April. He's been working on the music for many years, and has finally got them into recording. You could listen to samples on the website:

"Peaceful Easy Feeling" has been a top-10 fave with me too, for 33 years now -- hard to believe anything can last that long I just got The Eagles Farewell 1 Tour dvd -- there's an amazing version of that song on it -- really touched my heart to hear how they've updated it from the perspective of 3 decades of water under the bridge.....
